Despite his young age he already has many years of experience. After a period of training in Italy and then abroad, in 2016 he opened the "Black Sheep Raw" in Trento, together with his sister Sofia, the first organic raw-food pastry in Europe (to find a similar one you have to go to Australia). In a short time the Black Sheep has become a point of reference for lovers of vegetable cuisine, but also for five-stars hotels, always looking for innovative quality products. In 2020 Michele decided to change location and to move his business in Trento in via Belenzani, a few meters from the central Piazza Duomo. In addiction to daily work in the pastry shop, Michele is a highly regarded chef who organizes cooking class both in Italy and abroad.
