Despite his young age, he already boasts many years of experience. After a period of training in Italy and abroad, in 2016 he opened ‘Black Sheep’ in Trento together with his sister Sofia, Europe’s first organic raw pastry shop (to find a similar one you have to go to Australia). In a short time, the Black Sheep became a reference point for fans of plant-based cuisine, but also for five-star hotels always on the lookout for innovative quality products. In 2020 he moved his business to Trento in Via Belenzani, a few metres from the central Piazza Duomo. In addition to his daily work in the pastry shop, Michele is a highly appreciated chef who organises cooking courses both in Italy and abroad.
